Anthy is very, very dear to my heart and so wonderfully complex that I feel like I discover something new about her every time I delve back into Utena again. Now, Utena does have many different canons and each of them has their own take on Anthy. The main anime's characterization is my die-hard favourite. That being said, I am familiar with all the different variations.
Regardless of which Anthy you pick to write about, don't be afraid to mix-and-match canons either if you feel like it. One of the most interesting things about the new manga chapter Saito released for the anniversary was seeing the obvious anime-inspired elements come into play and I have always been down for the way people try to connect all the different stories/timelines/character interpretations across the various Revolutionary Girl Utena media.
Canon-compliant is always fine and I think there's plenty of room to do some interesting character-exploration for Anthy, especially if you set the story somewhere pre- or post-series. What did some of the previous cycles look like, what kind of people did Anthy meet in them, how did she develop into the person she is when we meet her? How does Anthy adapt to life after she leaves Ohtori Academy, does she find Utena/how, what's the outside world like?
AUs are also always tons of fun. For want of a nail/canon divergence fics are always interesting. You could also completely leave Utena's world behind and stick Anthy (and any other character you want to bring along) in a completely different genre and/or setting. High fantasy, science fiction, superhero, film noir, gothic horror, whatever you're down for.
If you want to throw in some romance (though you absolutely don't have to if you don't want to), I'm down for shipping Anthy with any of the canon female characters. Utena/Anthy almost goes without saying and, believe me, I am more than on board and never get tired of this pairing. But if you feel like trying out some Juri/Anthy? Wakaba/Anthy? Nanami/Anthy? Shiori/Anthy? Kozue/Anthy? I can think of really interesting directions that any of these pairings can go in, so absolutely feel free to surprise me in this regard.
Whatever you decide to go with, I hope you have a good time writing it and I am super excited to see what you come up with.

Specific Prompt Ideas:
- Fractured fairy tale is a little...on the nose for Utena, but it's still one of my die-hard favourite styles of AU. As much as Utena is preoccupied with princes, princesses, and witches, there are an awful lot of fairy tale tropes that series doesn't really touch that might be fun to see the cast deal with.
- To say that Revolutionary Girl Utena likes playing with genre tropes is obviously putting it mildly. If you decide to transport Anthy (and any other characters) to another genre, I'd definitely enjoy something openly playing with that genre's conventions. I mentioned gothic horror as an off-hand AU option earlier and I have a complicated, literary nerd love-hate relationship with the genre - I think it's exactly the type of tropey mess that would be super fun to see Utena's cast deal with.
- You know what else Utena doesn't have enough of? AUs set in Mad Max style post-apocalyptic hellscapes.
- Okay, so that new manga chapter. The manga has never been my favourite Utena media per se, but I really liked Saito's new chapter and boy did the unsettling implications about whatever the hell took place pre-series in the duelists' childhoods stick with me. I'd be all over something that takes those implications and uses them to fuel an interpretation for what's actually going on in the world outside of Ohtori Academy pre-, post, or during the series and what it's actually like.
